One Saturday Morning

Happy weekend, my loves. After a week that had me busy from 6 a.m. to 9:30 p.m every day, I’ve never been more thankful for the weekend.

Finally, I can slow down and breathe. Slowing down and breathing obviously equates to pancakes on Saturday. Who’s with me?

One recipe, four pancakes.

Fluffy!

I used Pimp My Protein Shake’s recipe for blackberry pancakes made with coconut flour, and was wildly pleased with the results. I used frozen wild blueberries instead of blackberries, which offered sweet, warm pops of flavor throughout.

On the agenda today: gym with DM (I snuck him in the last time muhaha), post office, bank, browsing but not buying and then dinna out. Have a beautiful Saturday, all!

happy saturday! i make very simliar ‘cakes but i find using a lil chemistry makes them super fluffy ACV + baking soda=bubble up goodness in the texture. i’m dying to hear about the gig, sounds like you’re doing well only a few more days! x

I tried that pancake recipe ages ago and I loved it. SO glad I have a nice big bag of coconut flour in the cupboard, I need to make these again like now.

Wow- that pancake recipe sounds amazing! I keep seeing people use coconut flour in their pancakes. I need to give it a try!
